Paul Année is not just a baker; he is a foundational figure in Dutch food culture: a truly legendary bread pioneer and master artisan. He made his mark in Amsterdam when he opened his bakery in 1966. Année became a revolutionary figure by being one of the first in the Netherlands, as early as the 1970s, to champion pure, chemical-free, natural sourdough bread.



His dedication to slow fermentation, natural processes, and high-quality, organic ingredients was radical at the time. He educated consumers and inspired a generation of subsequent bakers, laying the groundwork for the modern artisanal food movement in the country. He became renowned for his uncompromising approach to quality. Although news signaled the closure of the bakery that bore his name, marking the end of an influential era, this 'stop' was merely a brief creative pause for Paul himself.
